Xylitol is a natural, non-fermentable sweetener that helps restore a proper pH balance to the mouth. A properly balanced pH creates an inhospitable environment for destructive bacteria including Streptococcus mutants. These types of bacteria are responsible for the formation of plaque. Xylitol is not actually a sugar, it's a sugar alcohol. Unlike other sugars it has five, not six, carbon atoms. Most mouth bacteria cannot make use of such sugars, which is why xylitol can help prevent dental caries.
