Vic’s Molasses Cookies This is a redo from a recipe I found in my Mom’s recipe box. Vic is her sister and this recipe now has a totally rockin’ health profile.
Ingredients:
2 ½ cups flour
1 tablespoon egg replacer powder
1 ½ tsp cinnamon
½ tsp ginger
½ tsp salt
¼ tsp cloves
½ cup shortening
½ cup Emerald Forest Xylitol or Erythritol
½ cup molasses
1 tsp. baking soda
½ cup soy, rice or other milk
Dusting Powder: use a few tablespoons of Erythritol
Note: Add more milk if batter is too dry.
Directions:
Preheat oven to 350 (need degree symbol). Line a baking tray with parchment paper or oil the tray lightly.
Cream sugar and shortening with pastry blender or electric hand mixer. Add molasses. Add baking soda to milk and dissolve. Add to wet mixture.
Mix dry ingredients together in a large bowl. Make a well in the center of the dry ingredients and add all liquid ingredients. Mix with a fork until well blended. Flour hands and turn mix onto countertop; shape into a ball. Pull off 14 pieces of dough. Form into small balls and dip into dusting powder and place on baking tray. Press lines into with tines of fork. Bake 10 minutes. Must be soft to touch when done.
Note: Frost with a blend of erythritol or powdered sugar, maple syrup, and vanilla extract. Add a small amount of milk as needed.
Time to Prepare: 20 minutes
Yield: 14 large, 20 medium cookies
