Pumpkin Bread Try fresh pumpkin for an unbeatable bread!
Ingredients:
1 ½ cup Emerald Forest Erythritol or Xylitol
½ cup vegetable oil
2 eggs (or egg replacer powder)
1/3 cup water
1 cup pumpkin
¾ tsp. salt
1 tsp. cinnamon
½ tsp. nutmeg
1 ¾ cup all purpose flour
1 tsp. baking soda
Directions:
Preheat oven to 350. Combine dry ingredients together in large bowl. Make a well in the center and add eggs, oil and water and mix well. Add pumpkin last and mix thoroughly. Spoon into loaf pan and bake 60-75 minutes or until knife comes out clean when inserted in center. Allow to cool before slicing.
Time to Prepare: 20 minutes
Yield: 1 loaf
